Boizel Rosé Absolu NV, Champagne. Champagne Boizel Rosé Absolu NV is an exquisite expression of the family-run house’s commitment to craftsmanship and tradition. Established in 1834 and now led by the 6th generation, Lionel and Florent Boizel, the house produces some of the finest champagnes on the iconic Avenue de Champagne in Épernay. The Rosé Absolu is made using grapes from leading vineyards across approximately 30 villages, primarily Grand and Premier Cru sites. A blend of Chardonnay, Pinot Noir, and Pinot Meunier, the wine is made in the classic champenois style, with the first press (cuvée) gently handled to preserve freshness. The wine is aged for a minimum of three years on its lees, gaining depth and complexity. Expect vibrant aromas of red berries, rose petals, and subtle spice, leading to a palate of raspberry, strawberry, and a hint of citrus. The fine bubbles and the characteristic minerality of Champagne’s chalky soils provide a refreshing lift, while the 30% reserve wines in the blend add richness and a creamy texture. This rosé is perfect for pairing with smoked salmon, fresh seafood, or berry desserts, making it an ideal choice for celebrations or refined dining..
