Château des Ravatys Organic, 2021 Côte de Brouilly. Côte de Brouilly is a small appellation that lies on the slopes of Mont Brouilly in the heart of Beaujolais. It’s one of just ten crus in the region – areas recognised for the particularly high quality of their wines. Château des Ravatys has been producing such wines here since 1850, and it’s built up a stellar reputation. Today, the wines are made by Aurélie de Vermont, who comes from a long line of Beaujolais winemakers. She crafts this limited-quantity bottling from organic Gamay vines that have an average age of 40 years – meaning low yields, but fantastically concentrated favours. The wine is left unfiltered so that all of that flavour ends up in your glass. You’ll find it fresh and floral with vibrant notes of blackcurrant, raspberry, cherry and a touch of spice. Its supple, elegant tannins make it an ideal match for cold cuts and pâté..
