Château Grand Moulin Grandes Vignes Blanc AOP Corbieres. Located in the Occitane town of Lezignan-Corbieres, the Château Grand Moulin was founded in 1988 by Noël Bousquet on the site of an old mill. Bousquet bought his first vineyard space at only 17 years of age and since 2014, his son Frédéric has followed in his footsteps. After working for four years as the agricultural director of a big company in Quebec, he decided to go back to the family property to take over the Château. Grapes for this wine are sorted upon arrival to the cellar, followed by skin maceration and cold settling. Vinification occurs at a maximum temperature of 16°C. The wine is aged in stainless steel vats to preserve its fruity character, undergoing three rackings with aeration for filtration. This wine is aromatic with aromas of white peach, apricot, and citrus, as well as hints of white flowers. The palate is full-bodied yet fresh, with a well-balanced acidity making it a wonderful pairing for herby grilled seafood, roast chicken or a creamy cheese platter..
