Domaines Paul Mas ‘Les 5 Vallées’ Rouge 2022, Pays d’OC. The Pays d’Oc is one of the most diverse wine regions in France, with not only a vast spectrum of terroir but also myriad grape varieties. As the name suggests, grapes for Les 5 Vallées come from the vineyards set in the five main wine-producing valleys: Aude, Gard, Hérault, Orb and Uzès. The result is a full-bodied red from the south of France that can stand up to your bold dishes – perhaps local favourites like cassoulet or duck confit. Blending Grenache, Carignan, Syrah and Merlot, it’s soft and fruity with generous notes of cooked fruit, raspberry dried herbs and spice. It will keep well in- bottle for the next few years – but given how beautifully it’s drinking now, why wait?.
