“Terrarum Single Estate Sauvignon Blanc, Casablanca Valley”. Founded by Pablo Morandé in 1996, the Morandé winery is a pioneering force in the Casablanca Valley, Chile’s premier cold-climate region for Sauvignon Blanc. Known for innovation, they were the first to plant vines in the valley, and to be certified sustainable. Today, enological director Ricardo Baettig leads the family-owned winery. With a diverse background in viticulture from Chile and Italy, Baettig continues to drive the winery’s commitment to quality forward, with sustainability at the forefront of their ethos. Grapes for this single estate Sauvignon are hand harvested, before being gently crushed for fermentation at cool temperatures – allowing for the delicate citrus flavours to develop. The wine rests on its lees before bottling, giving it a wonderfully lush texture, and making it a wonderful foodie wine. It’s crisp, refreshing and vibrant with notes of zesty citrus and passion fruit, complemented by subtle herbaceous flavours and a hint of minerality.
